What are your comfort foods? Mine tend to be snacks. I am a big chip and dip person. Over the weekend when Doug and I got home from looking at houses and potential rental units for the interim, I was FRIED and ravenous. I walked in the door and immediately diced up an onion to make this French onion dip. It is just so so good and so easy and perfect. Have it with Cape Cod chips, veggies, crackers, a spoon, whatever.
Here is what you need:
A nice big yellow onion diced
1.5 teaspoons Worcestershire sauce
Tablespoon of oil
1/2 teaspoon garlic powder
3/4 teaspoon onion powder
Salt to taste
Haphazard handful of dill, parsley, any herbs really (or skip it)
12 ounces sour cream
Allergy notes: Lee & Perrin's Worcestershire sauce is gluten free; Annie's Worcestershire sauce is vegan; Kite Hill sour cream is vegan; Green Valley Lactose Free sour cream is, obviously, lactose free and is my personal pick for this recipe.
Here is what you do:
Put a tablespoon of oil into your frying pan and heat it up, medium/high
Add the diced onion and cook for 5 minutes or so, then lower the heat and let the onions cook 20 or so minutes more until they are caramelized. If they start to look a bit dry just throw a tiny bit of water in the pan, it'll sizzle off and help matters.
Put the cooked onions in a bowl and let them cool down a bit
While they are cooling, measure out your seasoning
When they are room temperature or so add the sour cream, seasoning, and Worcestershire sauce to the bowl and mix vigorously
Transfer to a more attractive bowl because you're worth it
Top with the herbs if you have them, or skip them
